Today has been a lazy day. The rain has fallen lightly all day and I've been wrapped in a blanket watching the Travel Channel. Why is it that whenever it rains, I feel like making something sweet? Whatever the reason may be, that's exactly what I did. I found this recipe for funfetti cookies last night while scanning Pinterest. Its super fast and easy and totally delicious. I hope its sunny where ever you may be. Happy Spring!

Funfetti Cake Batter Cookies
The ingredients:
1 box vanilla cake mix
1 tsp. baking powder
2 eggs
1/2 cup vegetable oil
1/2 tsp. vanilla extract
1 cup color sprinkles
Directions:
Preheat oven to 350 degrees F. In a large bowl, mix together cake mix and baking powder. In a small bowl, mix eggs, oil, and vanilla. Add egg mixture to cake mix and stir. Thoroughly stir in sprinkles (I found it easier to roll up my sleeves and mix in the sprinkles with my hands. I do warn you though, the batter is quite sticky). Drop by spoonfuls on cookie sheets sprayed with a non-stick spray. Bake 10 minutes and allow to cool.
Anddd, the finished product...
This recipe made about 18 large cookies. I think next time I may either double the recipe, or just make smaller cookies. Large cookies are fun though. [:
